Naturally gluten-free, millet is also a great source of essential amino acids, dietary fiber, manganese and phosphorous. It’s small, yellow fruit bears a mildly sweet, slightly nutty flour with a texture similar to cornmeal. First domesticated in the 5th century B.C. in Africa and Asia, this ancient grain was the most widely cultivated grain in China before rice. It is considered one of the world’s oldest cultivated crops.
