White Sonora
White Sonora is North America’s oldest wheat variety, first cultivated along the desert plains of the Sonoran borderlands in the 1600s. Brought north from Mexico through generations of farmers and bakers, it gained popularity as the wheat used for the original flour tortilla. It remains a symbol of regional flavor today.
Our White Sonora flour is stone-milled to preserve its pale hue and gentle aroma. The result is a soft, silky flour with a mellow, buttery flavor and tender crumb — perfect for tortillas, biscuits, and tender pastries.
